Roasted Pumpkin Spice Nuts6As I checked out in Costco the other day, the cashier looked at my 3 cans of pumpkin and told me a story about how she buys pumpkin every year and then proceeds to not use any of it. She said she ends up donating it, which is awesome, but I just could not relate! I smiled, just waiting for my kids to jump in and leak out the truth that their Mama has been putting pumpkin in everything. See, I am that girl. I love boots, scarves, fires in the fireplace and everything fall.  I am pumpkin obsessed and I can’t stop and I won’t stop!

The part that’s hard for me however, is how the majority of fall cooking involves sugar, carbs and all the things that leave me feeling tired, grumpy and not so good about myself. Personally, I’m a huge fan of protein. See, our bodies need protein to feel full and maintain even blood sugar levels and I’ve noticed that I need protein to not be hungry every 5 minutes.

When  I  made these Roasted Pumpkin Spice Nuts yesterday, I felt like I was finally getting it right.  I ate a handful when they were warm, fresh from the oven and they were perfect.

All the smells and flavors of fall, without any sugar. Finally.

So here’s what you do…..

Preheat your oven to 250 degrees.

In a large bowl, whip an egg white with a fork or a whisk, until frothy.

Roasted Pumpkin Spice Nuts Stir in sea salt, pumpkin pie spice, cayenne pepper and liquid stevia (or sweetener of your choice- sugar, honey or maple syrup would work, too ).

Ingredients
  1. 1 egg white
  2. 1 teaspoon sea salt
  3. 2 teaspoons pumpkin pie spice
  4. ¼ teaspoon cayenne pepper
  5. 1 tsp liquid stevia (or sweetener of your choice- sugar, honey or maple syrup would work, too).
  6. 3 cups unsalted nuts
Instructions
  1. Preheat oven to 250 degrees.
  2. In a large bowl, whip an egg white with a fork or a whisk, until frothy.
  3. Stir in sea salt, pumpkin pie spice, cayenne pepper and liquid stevia (or sweetener of your choice- sugar, honey or maple syrup would work, too).
  4. Dump in 3 cups nuts and stir together.
  5. Arrange nuts in a single layer on top of a parchment paper lined cookie sheet.
  6. Stirring about halfway through, bake nuts for 45 minutes to 1 hour, depending on how crispy you want them.
