Toasted Almond Brussels Sprouts

You know those meals that come together easily without a recipe? In my kitchen those meals are more commonly known as ‘I haven’t been grocery shopping and need to throw some random ingredients together for dinner.’ I digress, this dish turned out fabulous, is simple, and is the perfect side for a main meal. I’m someone who adores Brussels Sprouts and don’t find them to be bitter, although apparently some people do! 

Toasted Almond Brussels Sprouts

Ingredients
  1. Brussels Sprouts
  2. 4-5 strips of bacon
  3. 1 cup toasted almond slivers (you can find these at Trader Joes)
  4. Salt and Pepper to taste
  5. Organic no-salt seasoning (you can find this at Costco)
  6. 1 TB olive oil
  7. 3/4 cup beef stock
  8. 3-4 cloves minced garlic
Instructions
  1. Cut bacon strips into bits and cook until crispy.
  2. Set aside and remove bacon grease, leaving a small amount in the pan.
  3. Add olive oil and cook Brussels Sprouts 5-6 minutes over medium heat.
  4. Add beef stock and garlic; continuing cooking until it steams down.
  5. Add seasonings, bacon, and almond slivers, toss and serve!
