Fool-Proof Whole Wheat Banana Muffins 3

It was one of those weeks. While we were preparing my 2 year old for his first trick or treating experience, the stomach bug hit. We spent the night hulled up on his bedroom floor. Sparing you all the details but in the end, we didn’t make it trick or treating. Needless to say, my son was pretty bummed out. So after healing up and feeling better, I asked him what he wanted to do. His reply, “make muffins with CHIPS”. So we made my fool proof muffin recipe and added a few dark chocolate chips as a substitute Halloween treat.Whole Wheat Banana Muffins

  1. 2 cups whole wheat flour
  2. 1t baking soda
  3. 1/2t salt
  4. 2Tablespoons flax seed meal
  5. 1/3c canola oil, or melted coconut oil
  6. 1/4c honey
  7. 2 eggs
  8. 3 mashed large bananas
  9. 4Tablepoons hot water
  1. Stir together dry ingredients. Set aside.
  2. Mash bananas in a large bowl and add oil, honey and eggs.
  3. Add dry ingredients to wet, alternating with hot water. Mix in between alternations. If the mixture is too wet, add a bit more flour. If the mixture seems too thick, add a bit more water.(variation in banana size makes the flour amount change)
  4. Spoon batter into 12 greased muffin cups. I like to use the reusable muffin cups and they virtually never stick to the muffin.
  5. Bake at 325 degrees for around 20 minutes. Let muffins cool in tin for about 5 minutes before removing.
  1. I like to add fresh blueberries, or in this case, a handful of dark chocolate chips as a treat.
