One of my all-time favorite cookies is the molasses cookie. They were my number one craving when I was pregnant with both of my kids and I would be ashamed to share how many of these cookies I have consumed in the past year. This recipe is everything I love in cookie. Sweet, spicy and just the right amount of chewy goodness.

Chewy Molasses and Cardamom Cookies

Ingredients
- 1.5 cups butter, softened
- 1.5 cups granulated sugar, extra for dusting
- ½ cup molasses
- 2 eggs
- 4 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 3/4 teaspoon ground cardamom
- 1 teaspoon ground ginger
- 1 teaspoon salt
Instructions
- Mix butter and sugar in a standing mixer until combined and fluffy.
- Beat in molasses and eggs.
- In a large bowl, mix together flour, baking soda, cinnamon, cardamom, ginger and salt.
- Add dry ingredients to mixer and blend until combined.
- Scoop dough out in ping pong ball size portions and roll each into a ball and dip one side into a small bowl of sugar. Then press cookie down, sugar side up with the palm of your hand on the cookie sheet. I like to use a melon baller to portion out my dough.
- Bake at 375 for 9-11 minutes. I recommend under cooking them and letting them sit on the pan for a few minutes before transferring them to a cooling rack.
- If the dough is too sticky to work with, chill in the refrigerator for 10 minutes before baking.
