10 Great Meals for Hiding Veggies In

When I was a kid, my mom’s nickname was Grainy, because she ate so incredibly healthy. But my sister and I? We ate lots of Mac ‘n cheese and Top Ramen, with healthy things here and there, although they weren’t our favorites. Now as an adult, I have very similar taste as my mom did and I don’t think it’s because she forced veggies down me as a kid (she didn’t), I think it’s because she was a beautiful example of a strong, healthy and positive woman.

She influenced me, by living it out, not preaching it. With 3 kids of my own, we have our share of likes and dislikes in our home.  Rather than stressing, I try to offer healthy options, while also being realistic. Mostly I want to lead by example since my kids are learning what’s “normal”, by watching. Here’s to balance, creativity and, sneaking in veggies if necessary. May we be women that feed our families food that truly is for thriving.

    My garden is bursting with kale, zucchini, tomatoes, beans and carrots this year so this blog post is just what I needed for some cooking inspiration! I love picking veggies with my daughter out in our garden every day. It’s a great way to start them young to take pride in what they eat by growing it themselves. My daughter is 2 and she planted every seed in our garden this year. But as I look at the pile of zucchini piling up on my counter, even I find myself thinking, “oh another night of grilled zucchini for dinner…” This post has so many recipes to use it creatively (or hide it in!).
